Fattoria La Ripa CHIANTI CLASSICO DOCG Gran Selezione 2010 Organic cod LRP-W3-2010
The top level of Chianti Classico DOCG Selezione – is a new classification, made using the best grapes harvested solely from estate’s own vineyards, with more exacting requirements for alcohol, extract and ageing.
2008 was the first harvest of Fattoria La Ripa’s small, new, extremely well exposed vineyard (5000 plants per hectare) the limited production of which was selected as a Gran Selezione by the Consorzio del Chianti Classico.
Alcoholic fermentation and maceration are carried out in stainless steel tanks at a controlled temperature (2530°C).
Spontaneous malo-lactic fermentation is achieved in concrete tanks.
The Gran Selezione is aged for 24 months in French oak Tonneaux (700 litres each) and then refined in bottles for a minimum of 3 months before its release
