Fattoria La Ripa CHIANTI CLASSICO RISERVA DOCG 2012 Organic cod LRP-W2-2012
Fattoria La Ripa Riserva is produced using only the best grapes (35-45 yrs) of vineyards situated at approx. 400m. Asl and planted on poor, stony soil (galestro and alberese) with
a pH of 8,2 and carbonates in excess of 40%. The vines are pruned using the “archetto toscano” method.
The considerable age of the vines is a key-factor of the quality of our Riserva, drastically limiting the quantity but increasing the ageing potential of the wine
For Vinification the Traditional method is used with fermentation carried on between 25°and 30°C in small tanks accompanied by a gentle maceration followed by the traditional Governo” in the Tuscan style and spontaneous malo-lactic fermentation.
Maturation is made using oak casks (tonneaux) for about 18 months and refinement in bottle (minimum 6 months)

Organoleptic characteristics of the wine:
Colour: deep ruby red
Bouquet: spicy and fruity. Cherry and plum above all
Flavour: medium body, smooth texture, tight tannins and a long cherry, white tobacco aftertaste.
